Dean's at Let's Eat Restaurant has now made its mark as one of Perth's favourite restaurants. Willie Deans describes his cooking as vibrant modern Scottish cuisine.

Michelle Pfeiffer, let’s just say I’m a big fan of her acting.

Have you ever been really nervous about cooking for anyone?
No but I was nervous cooking in the finals of the Scottish and National Chef Competitions.

Where or from whom did you get your desire to become a chef?
It must have been in my blood, my father was a master baker.

Quick and easy meal after service?
We call it our soupson, little tip bits of what’s left at the end of service with some fresh bread.
 
Where is your favourite restaurant in Scotland and why?
The Seafood Restaurant at St Andrew’s, I love seafood.
 
What would you say is your signature dish?
I have an abundance of recipes which I have developed over the years, usually slow cooked meats with tender cuts.
 
Which celebrity chef would you most like to cook for you?

He has on many occasions; Gordon Ramsay’s in London and has spent time with me after the meal.
 
What gadget could you not live without in your kitchen?

A plastic sheet; which I use for biscuit stencils.

What is your favourite Scottish ingredient?
All game, (grouse, pheasant, venison)
 
Who is your favourite Scottish supplier?
The ones who look after you, quality, price, delivery and service.
 
Give three words that sum you up as a chef.
Driven, fussy, consistent.

The Restaurant decoration is characterised by tall wooden shelving containing laid down wines and the extra crisp white linen tablecloths and serviettes adds clearly defined elegance. Staff are diligent and polished with approachable demeanor and the cuisine is of a very high standard. Certainly a restaurant to be visited when in Perth. "
