Ross Fraser | Loch Ness Lodge

Thanks to the rugged natural environment of the Highlands, Loch Ness Lodge has a ready supply of wonderful seasonal vegetables and fruit, as well as a fine selection of meats and seafood.
The kitchen is proud to serve up organic, ethically prepared and locally sourced produce wherever possible by working with a number of local artisan producers who share a passion for the ‘field to mouth’ experience.
Head chef Ross Fraser prepares creative and contemporary dishes, using only the freshest ingredients. He talks to EatScotland about working at this luxurious hotel on the beautiful banks of Loch Ness.
1. Who past or present would you like to cook a meal for and why?
My Mother, I’ve never cooked anything for her before.
2. Have you ever been really nervous about cooking for anyone?
Yes Marco came in for Lunch at Quovadis, I was cooking his main course, seriously nerve racking.
3. Where or from whom did you get your desire to become a chef?
My inspiration came from my father.
4. Quick and easy meal after service?
A Guinness.
5. Where is your favourite restaurant in Scotland and why? 
Gamba in Glasgow, for a superb seafood dining experience.
6. What would you say is your signature dish?
I have many, but not one that shines above the other.
7. Which celebrity chef would you most like to cook for you?
John Burton Race.
8. What gadget could you not live without in your kitchen?
A Mandoline.
9. What is your favourite Scottish ingredient?
Hare, Rabbit, Venison, Lamb, Langoustines, Crab, Strawberries and Raspberries – pick one!
10. Who is your favourite Scottish supplier?
All the suppliers I use are very good.
11. Give three words that sum you up as a chef.
Calm, Responsive and Organised.
12. What made you join EatScotland?
Would like to get onboard with anything that raises Scotland’s food profile.
13. What do you feel EatScotland will add to your business?
I feel that it will give us the exposure to a market where food is appreciated and the importance of being associated with a recognised body of excellence.
