Anyone who enjoys food and appreciates and understands the effort.

2.Have you ever been really nervous about cooking for anyone?
I am nervous every time.

3.Where or from whom did you get your desire to become a chef?
When I realised I could be paid to be creative and that the immediate end-result would hopefully, be someone’s enjoyment.

4.Quick and easy meal after service?
I am never hungry after service.

5.Where is your favourite restaurant in Scotland and why?
The Three Chimneys. It has the purest food philosophy towards Scottish food.

6.What would you say is your signature dish?
I don’t have one.

7.Which celebrity chef would you most like to cook for you?
A.A. Gill.

My knife.

Oatmeal.

I wouldn’t want to offend anyone! They are all great.

Fine Cuisine at The Three Chimneys
The food at The Three Chimneys is what the restaurant’s reputation is most famous for – and rightly so! Although dishes are creative, modern and exciting in concept, they often have a traditional twist associated with Scotland’s amazing culinary heritage. Great flavour, fine cooking and delicious texture are always of paramount consideration for Michael, but the genuine quality and seasonal freshness of the ingredients rarely fails to delight those tasting the finished dish when it is served to the table.

It is rare that the food in any restaurant truly reflects its location quite as much as it does at The Three Chimneys on the Isle of Skye and this is something that has contributed to the restaurant’s popularity over two decades. The restaurant may be remote, but it is definitely a “must-go” Scottish food experience.

Prime white fish and shellfish of every kind sparkling fresh from the cold, clear waters that surround Skye’s rocky shore; a wonderful selection of vegetables, salad leaves, herbs, mushrooms and soft fruits from the island’s working crofts and gardens; Skye lamb and Highlander beef reared and naturally grazed in the island’s glens, as well as wild venison from the high hills and game from Highland estates; these are all regular features on the daily changing menu. Handmade cheeses, free-range eggs and dairy products are also used alongside the wonderful selection of breads and rolls, oatcakes and traditional bakery made every day in the kitchen.
