My family to show what I can do.
Have you ever been really nervous about cooking for anyone?
I really enjoy what I do and because of that I do not think I ever have been nervous cooking.
Where or from whom did you get your desire to become a chef?
After meeting Kevin McGillvary I was inspired by him but that was after I had begun my career as a Chef.
Quick and easy meal after service?
Scrambled eggs.
Where is your favourite restaurant in Scotland and why?
Peri’s in Kilmacolm because of its big Italian portions and reasonable prices.
What would you say is your signature dish?
Pan fried scallops with Sautéed potatoes, roast cherry tomatoes and Crab Crème Fraiche.

Gordon Ramsay
What gadget could you not live without in your kitchen?
Tea maker
What is your favourite Scottish ingredient?
Oban Scallops

Colin Paterson who supplies us with consistently high quality vegetables

What made you join EatScotland?
We work hard to produce food of a very high standard of taste, quality and presentation using locally and Scottish sourced produce and ingredients. Recognition of that through a national scheme like this is fantastic.

Exposure of the Restaurant to a wider audience.
Dining at Lockerbie Manor Restaurant
This welcoming country house hotel has had much of its former Georgian grandeur restored and you can dine is some splendour in the refurbished dining room, or relax in the well appointed elegant lounge. Meals are served from fresh produce where possible, in a traditional style with modern accents. The Queensberry Dining Room, with its wood panelled walls ornate chandeliers and magnificent views, creates a superb ambience in which to enjoy the wonderful cuisine of a traditional nature. The bar and restaurant are open to non residents, offering a superb range of culinary delights from light lunches to elegant dinners. The style of cuisine is modern Scottish and illustrates great flair and imagination from Head Chef Will Furlong and his team.
