1. Who past or present would you like to cook a meal for and why?
I cooked for the Scottish Rugby Team recently, but I’d love to cook for the English Rugby Team. I’m a big fan, and I’d enjoy the challenge of fulfilling their appetite.
2. Have you ever been really nervous about cooking for anyone?
Not specifically, it’s more important to me to ensure that every guest in my restaurant has had a fantastic meal: regardless of whether they are a celebrity or not.
3. Where or from whom did you get your desire to become a chef?
My Mother is a chef so I guess you could say it’s in the blood.
4. Quick and easy meal after service?
Some Aiket cheese with walnut and raisin bread.
5. Where is your favourite restaurant in Scotland and why?
Dusit, a Thai restaurant on thistle street in Edinburgh, they have a great authentic menu and also make a venison curry.
6. What would you say is your signature dish?
I like to change the menus seasonally to keep things fresh and exciting. One of my favourite seasonal dishes at the moment is a Organic Salmon & Pan fried Crab Cake, served with baby spinach and Arran mustard sauce.
7. Which celebrity chef would you most like to cook for you?
Marco Pierre White say no more
8. What gadget could you not live without in your kitchen?
Pasta Machine
9. What is your favourite Scottish ingredient?
Stornoway black pudding no other black pudding can touch this ingredient.
10. Who is your favourite Scottish supplier?
If I have to name one it would be Clark’s speciality foods
The Scottish cheese selection they offer is superb, I never knew Scotland had so many fantastic cheeses until Clarks introduced them to me.
