1. Who past or present would you like to cook a meal for and why?
Gordon Ramsay – he is my idol – he’s very straightforward, gets straight to the point,  has an extremely high profile and is running some of the best restaurants in Britain.

2. Have you ever been really nervous about cooking for anyone? Dining at Duisdale
Never – always feel at home in the kitchen – not happy unless I’m cooking

3. Where or from whom did you get your desire to become a chef?
I was working in the Waterfront Restaurant and discovered I could cook - chopping veg, cooking steaks and thought “I’m really good at this!”  so wanted to carry on and learn more
 
4. Quick and easy meal after service?
Pot noodle!! Chicken and Mushroom is my favourite
 
5. Where is your favourite restaurant in Scotland and why?
Not really eaten in many good Scottish restaurants – Heston Blumenthal’s  Fat Duck Restaurant is where I really want to eat…his food is just out of this world and I know I’ll want to try everything on his menu.
 
6. What would you say is your signature dish?
Wild Scottish Rabbit with poached pears – it’s delicious
 
7. Which celebrity chef would you most like to cook for you?
For a bit of crack and a laugh – Jamie Oliver – but food wise I would say Heston.

9. What is your favourite Scottish ingredient?
I’m such a fan of everything Scottish I can’t really pick any one thing out

10. Who is your favourite Scottish supplier?
Willie Fish!! – from Oban – he can get anything you want!!
 
11. Give three words that sum you up as a chef.
Exciting, unique and passionate
 
12. What made you join Eat Scotland?
Good to be involved with an organisation promoting good Scottish Food.

13. What do you feel Eat Scotland will add to your business?
A platform from which to spread the word about our business and access to a wider market who are passionate about great food.
