Who past or present would you like to cook a meal for and why?
My wife even though we work together everyday. She never really gets to experience the restaurant and the food.

Have you ever been really nervous about cooking for anyone?
I had to cook Albert Roux a steak, I was petrified I would overcook it. He must have enjoyed it, as he sent a beer through for me after service.

Where or from whom did you get your desire to become a chef?
My mum she’s such a bad cook I had to learn to cook for myself

Quick and easy meal after service?
Poached egg and smoked bacon with toasted muffin

Where is your favourite restaurant in Scotland and why?
Michael caines @ abode in Glasgow. Extremely good food top notch service

What would you say is your signature dish?
Roast rump of lamb with herb gnocchi, aubergine caviar fine beans and thyme jus

Which celebrity chef would you most like to cook for you?
Im not really sure what a celebrity chef is? If it’s a famous chef then Thomas kellar, as I would love to pick his brain and organise a stage at per se!

What gadget could you not live without in your kitchen?
Kitchen timers, I’m getting increasingly forgetful

What is your favourite Scottish ingredient?
West coast scallops. The best in the world

Who is your favourite Scottish supplier?
All of them! It’s best not to play favourites

Give three words that sum you up as a chef.
Patient, determined and humble.

What made you join EatScotland?
The chance to be associated with a scheme which promotes all the good things to do with food in Scotland was the main driving force

Head Chef Richard’s imaginative cooking uses the day’s catch of local fish and shellfish along with quality meat and other great ingredients from Scotland’s natural larder, while Nicola provides a warm and friendly service.

Recognition of their high standard was gained in June 2007 when Coast received both a silver and small team excellence award from Eat Scotland (a quality assurance scheme operated by Visit Scotland).
