Who past or present would you like to cook a meal for and why?
Augustus Escof… because he was one of the best chef’s in the world and has inspired all the great chefs. It would be such a great honour to cook for someone of that calibre
Have you ever been really nervous about cooking for anyone?
Cooking for Lord & Lady Bute at age 17 was very nervous but everything was fantastic. Sir Richard Attenborough came and thanked me personally for the meal!
Where or from whom did you get your desire to become a chef?
As my mother was brought up on a farm in Ayrshire and my grandmother was a fantastic baker and made her own cream and butter, the rest just followed suit for me to start cooking

Where is your favourite restaurant in Scotland and why?
The Three Chimneys on the Isle of Skye as they use all local and home grown produce and have set the standards for the rest of the industry. A fantastic combination!
What would you say is your signature dish?
Rannoch moor Venison, celeriac and butternut squash gratin, creamed parsley and cinnamon jus.

Dining in the Bowfiel Hotel
The Country Club Restaurant at Bowfield Hotel & Country Club specialises in using the best local produce simply and expertly presented. Set in what was an original bleaching mill, the restaurant has an informal feel to it, concentrating on the food.
We passionately believe in our food at Bowfield. We also believe you need to feel good to enjoy a great dining experience to the full and we are sure that our delightful, informal, stylish yet easy friendly atmosphere and ambience will help make your whole dining experience complete.
We also believe and know that food alone is not the only reason why people enjoy a memorable dining experience so it's important to us that everything is done right and to the best of our ability. We must be doing something right as we continue to welcome return customers and enjoy the opportunity to renew 'auld acquaintances'.
We believe in our classic Scottish culinary product - twists and novelties too often distract from the final dish so we avoid them. And our restaurant is all about making people welcome, comfortable and feeling at ease.
In addition to the Country Club restaurant the lounge and bars within the hotel serve bar food and snacks all day which are produced with the same fresh local produce and come from the same kitchens.
