Shetland

Not to be outdone by its southerly neighbours, Shetland boasts an array of great pubs and hotels, with seafood the main attraction. Fish and shellfish, whether caught or farmed locally (and often organic), is served fresh, smoked or, in a hint at the islands’ Norse background, pickled; Gravadlax is a specialty. Free-grazing lamb and mutton, raised on a diet of heather and wild grasses, is also superlative. Vegetables and fruit are grown by traditional means - including plantiecrubs, little stone enclosures that protect crops from both sheep and winds - or, for more delicate produce, under glass.

Following the oil boom of the 80s, Shetland is increasingly focusing on small business set-ups. A number of firms now promote some of the fine produce available on the island.

Shetland Fudge Company

A small family business, hand-making fudge and truffles. Using the finest ingredients and local produce wherever possible, this is the only chocolatier and fudgemaker in Shetland, with all creations handmade on site.

Hand Made Fish Company

Try something special from a huge variety of smoked salmon, including: plum wood, whisky barrel (with a little bit of Shetland peat), Hawthorn, Juniper, Beech, and Olive wood. A delicious oak smoked haddock too! Hand Made Fish is based in Bigton in the south of Shetland.

Modern-Day Fishing

Many boats now have computerised logging of the date and time of catching each box of fish and a record of the temperature it was kept at on board, in the fishmarket and en route to the buyer. That means it's the pick of the best - wild, pure, and processed quickly to keep it that way. There's the same obsession with quality aboard the shellfish boats landing scallops, crabs and lobsters.
