Scottish ingredients to surprise your tastebuds

Scotland boasts vibrant cities, majestic castles and some of the best food on offer in Europe. The capital city is a great place to introduce yourself to the local produce, boasting the largest Farmers’ Market in the country as well as some great Michelin-starred restaurants.
To celebrate the finale of the Year of Food and Drink, you can watch top chef Neil Forbes, who was named Scottish Chef of the Year at the 2011 Scottish Restaurant Awards, as he cooks up a feast of organic lamb, barley, wilted green and roast roots.
Neil makes his way to meet the producers who set up stands every Saturday morning on Castle Terrace at the Edinburgh Farmers’ Market. From fine mozzarella to tempting venison and some magnificent vegetables, this is a wonderful place to pick up delicious, fresh food for a true taste of Scotland.
If you are keen to learn, there are several cookery schools available in the city, including the Edinburgh New Town Cookery School in the centre. It is here that Neil illustrates how best to prepare, cook and serve the meal he is creating. Why not try the recipe to impress your friends or simply enjoy watching his creativity?
