Seared Scallops, on a bed of crushed peas, with scallop foam, lemon dressing:
"Immediate visual appeal. The slices of attractively seared scallops were laid out in an overlapping line atop the fresh, bright green peas, and coated with a light, frothy foam, garnished with pea shoots." "Cooked and presented to a very high standard."

Slow roasted belly of Gloucester Old Spot Pork, Fillet wrapped in Parma Ham,  butternut squash puree, millefeuille potatoes:
"The belly of pork was meltingly tender, with thin, brittle crackling delicately cross-hatched. The fillet was pink and juicy, with a dark pink border." "A mouth-watering palette of flavours. The smooth, sweet butternut squash, the slightly bitter flavour of the broad beans and the fresh green spinach were perfect foils for the deep, rich meaty pork".
