1. Who past or present would you like to cook a meal for and why
Chef Escoffier who pioneered modern cooking over 100yrs ago. It would be interesting to hear his take on how we have progressed.
2ave you ever been really nervous about cooking for anyone
My girlfriend at the time and wife to be Gillian-think it was roast chicken and mushroom risotto.
3here or from whom did you get your desire to become a chef
My family all cooked especially my grans, so it seemed natural to me, also living and working in London in mid 80s with chefs like Alistair Little, Simon Hopkinson and Rowlly Leigh
4uick and easy meal after service
Usually I spice up what ever my wife made for the kids-a bottle of chilli garlic sauce works wonders with pasta or mince and tatties.
5here is your favourite restaurant in Scotland and why
The Peat Inn holds fond memories when Davy Wilson owned it and I love Glasgow's Mother India for lamb Achari and Chinatown Glasgow for Lobster.
6hat would you say is your signature dish
Roast shellfish spaghetti with lobster, king prawn, mussels and scallops and lemon, garlic and parsley - simple, natural and tasty, DONE!

Eat Scotland has, and will, continue to raise my business's profile at home and abroad, as well as offering us the opportunity to maintain, develop and improve standards within the business.
Former chef to rock stars across the globe like Tina Turner, Bryan Adams and Paul McCartney John Quigley runs his new business venture in Glasgow with wife Gillian. Formerly Head Chef for some of the UK's most stylish venues and restaurants at their most exciting times John, named Youngest Head Chef by the Food Guide at 21, has been running the highly fashionable Quigley's restaurant since 2001 and he has now decided to create a new family owned and run business, Red Onion.
It's a long way from John's former Contributing Editorship Magazines and his many international TV appearances from MTV to STV. John and Gillian are now really looking forward to delivering an all day eating and drinking experience perfect for entertaining their Glasgow fans, friends and guests in a cosy and relaxed atmosphere at 257 West Campbell Street in Glasgow.
Open from Monday to Sunday the Scottish inspired Breakfast Menu runs from 9am until 12noon, when until late the All Day Menu kicks in.
The brilliantly laid out diversity of the restaurant's space, the corporate menus and deals, the quality of John's food and the high standards of service combined with the informal, light and bright environment means Red Onion caters for everybody.
