Have you ever been really nervous about cooking for anyone
No, not really as I treat every customer as if they were a celebrity.

Where or from whom did you get your desire to become a chef
When I left school I saw an advert in the Dundee Courier for a Commis Chef ' the salary was £5 per week which sounded great at the time so I applied and I have never looked back!

Where is your favourite restaurant in Scotland and why
Orocco Pier in South Queensferry, the food is fantastic and the way they have slotted in an amazing contemporary restaurant into a beautiful Victorian building is so clever and works so well.

What would you say is your signature dish
Supreme of Scottish Salmon on linguine in a roasted tomato butter.

Which celebrity chef would you most like to cook for you
Rick Stein ' makes the most of clean, simple food.

What gadget could you not live without in your kitchen
My knives definately and of course a cup of tea!

What is your favourite Scottish ingredient
Has to be venison.

Galloway Lodge Preserves in Gatehouse of Fleet, their recipes are very simple, however, the end results are incredible.

Confident, consistent and demanding.

What made you join EatScotland
I agree with the overall principal of using fresh, local Scottish produce and believe that the customer today has the right to know exactly what they are eating and where it comes from, EatScotland really helps promote this aspect of our business.

Under private ownership of the Cally Estate we have a strong connection with Scottish farming and Scottish produce; understandably our chefs' buying policy, whenever feasible, is to source fresh produce as locally as possible. We have established a partnership with the local Farmers Market and showcase some of their produce in our restaurant. Our menus, both during the day and the evening, provide a good balance of choice for all our customers, some old favourites which you would expect and some old favourites with a contemporary twist which you wouldn't expect! Our Kids menu is very popular and has been designed by the pupils of the local Primary School! We have recently refurbished our Restaurant and the new fresh feel creates a very relaxed atmosphere for our customers.
