Head chef of the award-winning Atrium joins The Caves
The Atrium's former head chef Colin Grieves brings his culinary expertise to award-winning Edinburgh venue The Caves.
He was at the helm of one of Scotland's multi-award winning and iconic restaurants that picked up coveted industry accolades including Best Restaurant of the Year, Chef of the Year and Edinburgh Restaurant of the Year.
Now, The Atrium's former head chef Colin Grieves is set to move his culinary flair and expertise to another Edinburgh institution ' The Caves.
Taking up position of Head Chef of the inimitable award-winning venue and UNESCO World Heritage Site from March, Colin, who has also worked with The Stockbridge Restaurant and Ducks at Le March Noir, will work with the events team to offer culinary excellence through innovative menus and exquisite food, only using the finest of flavoursome ingredients.
'The food ethos of The Caves really excited me as they also pride themselves on producing everything in-house using fresh, local and seasonal ingredients that are carefully sourced,' explains Colin, who started with The Atrium in 2007 and became head chef in 2010.
'It's exciting to be able to bring my experience and book of artisan growers, breeders and producers to The Caves and help them achieve even more industry awards ' this time with their cutting edge food.'
Nestled in the depths of the eighteenth century South Bridge in the heart of the Capital's Old Town, The Caves is steeped in colourful history, and every vaulted room that has been sympathetically restored to its former glory has a story to tell and a special place in Scotland's past.
A former stables to the French Cavalry who were body guards for the Royal Family, the rumoured hunting ground of Burke and Hare, and even the spiritual home of the Oyster Club of the Scottish Enlightenment, The Caves is iconic. But, it is nothing without its staff each of whom are play a vital part of the award-winning service and experience, ensuring every guest enjoys the occasion courtesy of the highest level of skill, expertise and professional service.
Events manager, Lisa Rowan, says: 'We may be an award-winning venue, but we never rest on our laurels. The appointment of Colin Grieves will help us take The Caves to the next level and we are excited about this new next chapter.'
