Scotland has been bound up with a sea fishery for generations ' and the 19th-cebtury herring boom laid the foundations of prosperity for many of today's east coast ports. Scottish fishermen today are sometimes described as 'the last of the hunters' ' and the quality produce they land is an inspiration for chefs - not just whitefish, but succulent shellfish too, as the original organic wholly natural foods. Meanwhile, fish farming also plays an important role in the northern economy.
