Wild Seabass Walewska with a mornay, lobster and truffle sauce: "The fish was ultra white, fresh and its delicate flavour stood out valiantly. The dainty pieces of lobster and the shavings of the truffle offered colour and a sharp contrast in flavours." "The fish itself was the strength of this dish with the lobster pieces and the truffle, tiny piquant interludes that added a different flavour." "The consistency of the sauce was well judged to nap the sea bass and the seasoning was skilfully applied to allow the flavours from the seafood and the truffle to remain true."
